Discussion will consider traditional uses of cover crops and adaptability of those uses to urban, suburban and rurual landscapes.  Various groups and species of cover crops will be considered each for their beneficial characteristics.

Discussion will focus on how to use cover crops to promote productive vegetable yields by increasing soil organic matter content, reducing weed competition and helping unlock soil nutrient availability.

Discussion will focus on how to use temporary leafy ground covers (cover crops) to reduce the use of shredded mulch, weeds and herbicide use in landscape beds.  Special consideration will be made regarding the use of cover crops as conversion or succession planting prior to permanent cover plantings to provide an attractive alternative to the use of herbicides.

Discussion will consider possibilities of using cover crops to re-vegetate problem or weedy lawn ares without the use of herbicides or mechanical tilling.  Various annual or bi-ennial root and leafy cover crops plants with special qualities for use in lawn renovation will be considered. 

Canning and storing fruits and vegetables

In this class we will discuss the boil bath and pressure cooker methods for preserving fruits and vegetables.  This class will be "hands-on" with equipment available to look at and discuss.

Discussion for this class will focus on freezing and dehydration methods.  Emphasis will be put on the correct packaging to use and how long produce will store with each method.

Planting and growing winter vegetables

This class will consider which leafy greens are best for winter growing and how to productively grow these plants with repect to frost and cold temperatures.

In this class we will discuss which root crops are easiest and most productive for winter growing.  Methods and techniques to manage soil and air temperatures as well as soil drainage and nutrition to maximize yield will be emphasised.
